  1. Prepare the peanut sauce: In a food processor, combine roasted peanuts, garlic, red chili, kaffir lime leaves, tamarind paste, palm sugar, soy sauce, and lime juice. Add a little water at a time and blend until smooth and thick, adjusting consistency as needed.
  2. Steam or blanch all vegetables (green beans, cabbage, spinach, potatoes, bean sprouts) until tender-crisp. Drain well and set aside.
  3. Slice the firm tofu and tempeh into desired shapes. You can pan-fry, air-fry, or bake them until golden brown and crispy.
  4. Arrange the steamed vegetables, fried tofu, and tempeh on a large serving platter. Add sliced cucumber and top generously with the peanut sauce.
  5. Garnish with fried shallots before serving. Serve immediately and enjoy!
