👨🍳 Instructions
- Preheat oven to 190°C (375°F). Line a loaf pan with parchment paper or lightly grease it. Prepare the flax egg by mixing ground flaxseed meal with water and letting it sit for 5 minutes.
- In a large pan, heat olive oil over medium heat. Sauté diced onion, carrot, and celery for 5-7 minutes until softened. Add minced garlic and chopped mushrooms, cooking until mushrooms release their liquid and brown, about 8-10 minutes.
- Stir in tomato paste, tamari, Dijon mustard, dried thyme, rosemary, and sage. Cook for 1 minute, then add cooked lentils and vegetable broth. Season with salt and pepper to taste.
- Remove from heat. Mash the lentil mixture slightly with a fork or potato masher, leaving some texture. Stir in the gluten-free rolled oats and the prepared flax egg until well combined.
- Press the mixture firmly into the prepared loaf pan, shaping it into a compact loaf. In a small bowl, whisk together ketchup, maple syrup, and apple cider vinegar for the glaze.
- Brush about half of the glaze over the top of the meatloaf. Bake for 35 minutes, then remove from the oven and brush with the remaining glaze. Return to the oven and bake for another 20 minutes, or until golden brown and firm.
- Let the vegan meatloaf cool in the pan for at least 10-15 minutes before carefully removing and slicing. This helps it set and prevents crumbling.
