🛒 Ingredients
- Zucchini, grated and squeezed 100 g · 17 kcal

👨🍳 Instructions
- Grate the zucchini, toss with 1 teaspoon of salt, and let sit in a colander for 10-15 minutes to draw out moisture. Firmly squeeze out as much water as possible from the grated zucchini using a clean kitchen towel or paper towels.
- In a large bowl, combine the squeezed zucchini with finely chopped onion, minced garlic, and chopped fresh dill or parsley. Stir well to mix all the ingredients.
- Add the all-purpose flour, baking powder, and a pinch of black pepper to the zucchini mixture; mix until just combined, adding a tablespoon or two of water if the batter seems too dry. Be careful not to overmix.
- Heat about 1/2 inch of vegetable oil in a large non-stick skillet over medium heat. Once hot, spoon dollops of the batter into the pan, flattening them slightly with the back of the spoon.
- Cook the fritters for 3-5 minutes per side, or until they are golden brown and cooked through. You may need to cook them in batches.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve immediately with your favorite vegan dip or sauce.
