👨🍳 Instructions
- To prepare the dough, combine flour, yeast, a pinch of salt (not in ingredients list), water, and olive oil in a large bowl or stand mixer; knead until a smooth, elastic dough forms, about 5-7 minutes. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- While the dough rises, prepare the filling. Sauté diced onion, bell pepper, garlic, and sliced mushrooms in a pan with a little olive oil until softened. Add fresh spinach and cook until wilted, then remove from heat and let cool slightly.
- In a separate bowl, combine ricotta cheese, shredded mozzarella, the cooled sautéed vegetables, and marinara sauce. Mix well and season with a pinch of salt and pepper (not in ingredients list) to taste.
- Preheat oven to 200°C (400°F). Lightly flour a clean surface, then punch down the risen dough and divide it into two equal portions. Roll each portion into a circle about 25 cm (10 inches) in diameter.
- Spoon half of the vegetable and cheese mixture onto one side of each dough circle, leaving a 2 cm (1 inch) border. Fold the other half of the dough over the filling to form a crescent shape, then carefully crimp the edges to seal.
