👨🍳 Instructions
- Wash and soak toor dal and masoor dal for 30 minutes, then drain. Cook the soaked dals with turmeric powder and a pinch of salt in sufficient water until tender; mash lightly and set aside.
- Heat vegetable oil in a large pot or karahi over medium heat. Add chopped onions and sauté until they turn golden brown.
- Add ginger and garlic paste and cook for another minute until fragrant.
- Stir in chopped tomatoes and cook until they soften and the oil begins to separate.
- Add Dhansak masala, cumin powder, coriander powder, and red chili powder; cook for 1-2 minutes, adding a splash of water to prevent burning.
- Add chopped pumpkin, carrots, and potatoes to the pot. Sauté for 5-7 minutes.
- Pour in some water, cover, and simmer until the vegetables are partially cooked.
- Stir in the chopped spinach and cooked mashed dals. Mix well.
- Add tamarind paste and more water if needed to reach desired consistency. Bring to a simmer.
- Cook for another 10-15 minutes, allowing all the flavors to meld and vegetables to become fully tender.
- Adjust salt to taste. Garnish with fresh coriander leaves before serving.
