  1. Cook Hakka noodles according to package instructions until al dente; drain and rinse with cold water to prevent sticking, then toss with a little oil and set aside.
  2. Heat vegetable oil in a large wok or pan over high heat. Add minced garlic, ginger, and sliced green chilies; stir-fry for 30 seconds until fragrant.
  3. Add sliced onion, julienned carrots, bell peppers, and shredded cabbage to the wok. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  4. Add the cooked Hakka noodles to the wok with the vegetables. Pour in soy sauce, rice vinegar, a pinch of sugar (optional), and season with salt and black pepper.
