👨🍳 Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat. Add chopped onions and sauté until softened and lightly golden, about 5-7 minutes.
- Add minced garlic, grated ginger, and chopped green chilies; sauté for another minute until fragrant.
- Stir in cumin powder, coriander powder, turmeric powder, and red chili powder. Cook for 30 seconds, stirring constantly, to toast the spices.
- Add diced potatoes, carrots, and cauliflower florets to the pan. Sauté for 5-7 minutes until they start to soften slightly.
- Pour in the canned diced tomatoes and mix well. Bring to a simmer, then cover and cook for 10-15 minutes, or until vegetables are tender.
- Add green beans and bell peppers, stirring them into the curry. Cook uncovered for another 5-7 minutes until they are crisp-tender.
- Stir in Garam Masala and cook for 1 minute. Taste and adjust seasoning if needed.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
