👨🍳 Instructions
- In a large bowl, combine flour, yeast, 2g sugar, 0.4g salt, and warm water; mix until a shaggy dough forms. Add 2g vegetable oil and knead on a lightly floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for 60-90 minutes, or until doubled in size.
- While the dough rises, prepare the filling: Rehydrate dried shiitake mushrooms and vermicelli noodles according to package directions. Finely chop napa cabbage, carrot, rehydrated mushrooms, scallions, ginger, and garlic.
- Heat 4g vegetable oil in a pan over medium heat. Add ginger and garlic, stir-fry until fragrant. Add chopped napa cabbage and carrot, stir-fry until slightly softened.
- Add rehydrated shiitake mushrooms and vermicelli noodles to the pan. Season with light soy sauce and sesame oil. Stir well and cook for another 2-3 minutes. Remove from heat and let the filling cool completely.
- Once the dough has risen, punch it down gently and divide it into 2 equal portions. Roll each portion into a smooth ball, then flatten and roll out into a 12-15 cm (5-6 inch) circle with slightly thicker edges.
- Place a generous amount of cooled filling in the center of each dough circle. Gather the edges of the dough upwards, pleating and pinching them together to seal the bun. Place each bun on a small square of parchment paper.
- Arrange the shaped buns in a steamer basket, ensuring there is space between them. Cover the steamer and let the buns proof for another 15-20 minutes.
- Bring water to a boil in the steamer pot. Once boiling, place the steamer basket with buns over the hot water. Steam for 10-12 minutes over medium-high heat. Do not open the lid during steaming. Serve hot.
