👨‍🍳 Instructions

  1. Boil potatoes until tender, then mash them. In a skillet, sauté diced onion and minced garlic until softened, then add mashed potatoes, drained black beans, cumin, chili powder, and a pinch of salt and pepper.
  2. Slightly warm the corn tortillas to make them pliable. Place a spoonful of the potato and black bean filling near one edge of each tortilla, then tightly roll it up into a flute shape.
  3. Heat vegetable oil in a deep skillet or pot over medium-high heat. Carefully place the flautas seam-side down into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
  4. Remove flautas from the oil and drain on a wire rack lined with paper towels. Serve immediately, topped with shredded lettuce, crumbled Cotija cheese, Mexican crema, and salsa.
