👨🍳 Instructions
- First, prepare the tzatziki sauce: finely dice the cucumber and squeeze out excess water. Mince the garlic and finely chop the fresh dill.
- In a bowl, combine Greek yogurt, diced cucumber, minced garlic, chopped dill, a drizzle of olive oil, and lemon juice. Season with salt and pepper, then stir well and refrigerate to chill.
- Slice mushrooms and bell pepper into strips. Toss them with 1 tablespoon of olive oil, dried oregano, paprika, salt, and black pepper.
- Heat a skillet over medium-high heat and cook the seasoned mushrooms and bell pepper for 8-10 minutes, or until tender and lightly browned.
- Warm the pita bread in a dry skillet, oven, or microwave until soft and pliable.
- To assemble, spread a generous spoonful of tzatziki sauce onto the warm pita. Layer with cooked mushrooms and bell pepper, sliced tomatoes, red onion, and shredded lettuce.
