👨‍🍳 Instructions

  1. Rinse the pinhead oats and brown lentils thoroughly. Cook the lentils in plenty of water until tender, then drain and set aside.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrot, turnip, and mushrooms, sautéing until softened, about 8-10 minutes.
  3. Stir in the pinhead oats, cooked lentils, chopped walnuts, and all the spices: black pepper, allspice, nutmeg, ground coriander, and dried thyme. Cook for 2-3 minutes, stirring constantly.
  4. Pour in the vegetable stock, bring the mixture to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the oats are tender and most liquid is absorbed.
  5. Once cooked, remove from heat and let it sit covered for 5-10 minutes to allow the flavors to meld and the mixture to firm up slightly. Serve hot.
