👨🍳 Instructions
- Heat olive oil in a large paella pan or wide, shallow pan over medium heat. Sauté chopped onion and minced garlic until fragrant, about 3-5 minutes.
- Add red and green bell peppers and cook for another 5-7 minutes until slightly softened. Stir in crushed tomatoes, smoked paprika, and saffron threads, cooking for 2 minutes.
- Add Bomba rice to the pan and stir to coat all the grains with the vegetable mixture. Pour in the vegetable broth and bring to a simmer.
- Arrange green beans, peas, and artichoke hearts evenly over the rice. Do not stir the rice from this point forward.
- Reduce heat to low, cover the pan with foil, and cook for 20-25 minutes, or until the rice has absorbed all the liquid and is tender. If desired, cook uncovered for the last 5 minutes to form a 'socarrat'.
- Remove from heat and let rest, still covered, for 5 minutes. Garnish with fresh parsley and lemon wedges before serving.
