👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
- Stir in minced garlic, grated ginger, ground cumin, smoked paprika, and cayenne pepper; cook for 1 minute until fragrant.
- Add diced red bell pepper and sweet potatoes to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in diced tomatoes and vegetable broth. Bring to a simmer, then reduce heat, cover, and cook for 20 minutes until sweet potatoes are tender.
