  3. Add the rehydrated peas to the dry mixture and toss to coat them evenly, ensuring each pea is lightly covered.
  4. Heat vegetable oil in a deep pan to 170-180°C (340-350°F) for frying, or preheat oven to 160°C (325°F) for baking.
  5. Fry the coated peas in batches until golden brown and crispy, about 3-5 minutes per batch; or spread them on a baking sheet and bake for 20-25 minutes, flipping occasionally, until crispy.
  6. Remove the peas from oil or oven, drain excess oil if fried, and spread on paper towels to cool completely before serving.
