👨‍🍳 Instructions

  1. Soak wheat berries overnight or for at least 4 hours, then drain and rinse.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Sauté diced onions, carrots, and celery until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the drained wheat berries, then pour in the vegetable broth. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 40-50 minutes, or until wheat berries are tender and most of the liquid is absorbed.
  6. Remove from heat, let it stand, covered, for 5-10 minutes. Fluff with a fork, season with salt and pepper, and stir in fresh parsley before serving.
