Wheat Berry Pilaf

- Wheat Berries 50 g · 170 kcal
- Onion 38 g · 15 kcal
- Carrots 30 g · 12 kcal
- Celery 20 g · 3 kcal
- Garlic 3 g · 4 kcal
- Vegetable Broth 240 g · 12 kcal
- Olive Oil 7 g · 62 kcal
- Fresh Parsley 3 g · 1 kcal
👨🍳 Instructions
- Soak wheat berries overnight or for at least 4 hours, then drain and rinse.
- Heat olive oil in a large pot or Dutch oven over medium heat. Sauté diced onions, carrots, and celery until softened.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the drained wheat berries, then pour in the vegetable broth. Bring to a boil, then reduce heat to low.
- Cover and simmer for 40-50 minutes, or until wheat berries are tender and most of the liquid is absorbed.
- Remove from heat, let it stand, covered, for 5-10 minutes. Fluff with a fork, season with salt and pepper, and stir in fresh parsley before serving.
