👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery; sauté for 5-7 minutes until softened.
- Stir in minced garlic and dried thyme; cook for another minute until fragrant. Pour in vegetable broth and diced tomatoes, then add the bay leaf.
- Bring the soup to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes to allow flavors to meld.
- Add the drained cannellini beans and chopped kale to the pot. Stir well and continue to simmer for another 5-10 minutes, or until kale is tender-crisp.
