  • Yuca (Cassava root), raw 800 g · 1280 kcal
  • Olive oil 40 g · 354 kcal
  • Garlic cloves 30 g · 45 kcal
  • Sour orange juice (or lime and orange juice blend) 100 g · 30 kcal
  • Fresh cilantro or parsley, chopped (for garnish) 10 g · 2 kcal

👨‍🍳 Instructions

  1. Peel yuca, cut into 2-3 inch chunks, and remove the fibrous core if present; place in a pot and cover with salted water. Bring to a boil, then reduce heat and simmer for 20-30 minutes until very tender.
  2. While yuca boils, prepare the mojo sauce: Heat olive oil in a small pan over medium heat, then add minced garlic and cook until fragrant (about 1-2 minutes), being careful not to burn.
  3. Remove from heat, stir in the sour orange juice, and season with salt and black pepper to taste.
  4. Drain the cooked yuca well. Arrange the tender yuca chunks on a serving platter.
  5. Pour the warm mojo sauce generously over the yuca. Garnish with fresh chopped cilantro or parsley before serving.
