- In a large bowl, dissolve active dry yeast and a pinch of sugar in warm water; let it sit for 5-10 minutes until foamy.
- Add all-purpose flour, a pinch of salt, and a tablespoon of olive oil to the yeast mixture; mix and knead for 5-7 minutes until a smooth, elastic dough forms.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 60-90 minutes, or until doubled in size.
- Preheat oven to 200°C (400°F). Divide the risen dough into 6-8 equal portions and gently flatten each into a thin, round disc on a baking sheet lined with parchment paper.
- In a small bowl, combine za'atar mix with 2-3 tablespoons of olive oil. Spread a generous amount of this mixture over each dough disc, ensuring even coverage.
- Bake for 10-12 minutes, or until the bread is golden brown and the za'atar mixture is fragrant and lightly toasted. Serve warm.
