Zaatar Manakish

- In a large bowl, combine flour, yeast, a pinch of sugar (for yeast activation), and salt. Gradually add warm water and 5g of olive oil, mixing until a shaggy dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 60-90 minutes, or until doubled in size.
- While the dough is rising, prepare the zaatar topping: In a small bowl, mix the zaatar spice blend with the remaining 10g of olive oil until it forms a thick paste.
- Once the dough has risen, punch it down gently and divide it into 4-6 equal balls. On a lightly floured surface, roll each ball into a thin, round flatbread, about 15-20 cm in diameter.
- Preheat your oven to 200°C (390°F). Spread a generous layer of the zaatar and olive oil mixture evenly over each flatbread, leaving a small border around the edge.
- Place the manakish on a baking sheet and bake for 8-12 minutes, or until the edges are golden brown and the zaatar topping is fragrant and slightly crispy.
- Serve the Zaatar Manakish warm, alone or with fresh vegetables like cucumbers and tomatoes, or a hot cup of tea.
