👨‍🍳 Instructions

  1. Clean the leeks thoroughly, trim the ends, and slice them into 2-3 cm thick rounds. Peel and slice the carrots into similar rounds or half-moons.
  2. In a wide, shallow pot, arrange a layer of sliced carrots at the bottom. Place the sliced leeks on top of the carrots in an even layer.
  3. Sprinkle the rinsed rice over the leeks. Drizzle with olive oil and then add the water, lemon juice, a pinch of sugar, and salt to taste.
  4. Cover the pot tightly and bring to a simmer over medium heat. Reduce heat to low and cook for 35-40 minutes, or until the leeks are tender and the rice is cooked through and has absorbed the liquid.
  5. Remove from heat and let it rest, covered, for 10 minutes. Garnish with fresh dill and a slice of lemon before serving warm or at room temperature.
