- Wash the zucchini, trim the ends, and slice them into thin rounds or half-moons, about 0.5 cm thick. Lightly salt the zucchini slices and let them rest in a colander for 15-20 minutes to draw out excess water.
- Pat the zucchini slices thoroughly dry with paper towels. Heat a generous amount of olive oil in a large frying pan over medium-high heat.
- Fry the zucchini slices in batches until golden brown and tender, about 2-3 minutes per side. Remove them with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- In a small bowl, whisk together the white wine vinegar, minced garlic, and chopped fresh mint. Season with a pinch of salt and black pepper to taste.
