👨🍳 Instructions
- Grate the zucchini and place it in a colander; sprinkle with a pinch of salt and let it sit for 10-15 minutes. Afterward, squeeze out as much liquid as possible using a clean kitchen towel.
- In a large bowl, combine the squeezed zucchini, all-purpose flour, egg, grated Parmesan cheese, chopped scallions, minced garlic, baking powder, and black pepper. Mix well until just combined.
- Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly into fritter shapes.
- Cook the fritters for 3-5 minutes per side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.
