- Dried salted cod (Bacalhau) 700 g · 574 kcal
- Potatoes 1000 g · 770 kcal
- Onions 300 g · 120 kcal

👨🍳 Instructions
- Place the dried salted cod in a large bowl of cold water, changing the water every 6-8 hours for 2-3 days until adequately desalted.
- Drain the desalted cod, remove skin and bones, and flake it into large pieces. Set aside.
- Peel potatoes and cut them into thick rounds. Slice onions into half-moons and finely chop garlic.
- Boil the potato rounds in salted water for about 5-7 minutes until slightly tender but still firm. Drain well and pat dry.
- In a large pan, heat half of the olive oil over medium heat. Sauté the sliced onions until soft and translucent, then add the chopped garlic and cook for another minute until fragrant.
- Lightly grease a large baking dish with olive oil. Arrange a layer of blanched potatoes at the bottom, followed by a layer of flaked cod and then the sautéed onion and garlic mixture.
- Scatter sliced red bell pepper and black olives over the cod and onion layer. Repeat the layers until all ingredients are used, ending with a layer of potatoes.
- Drizzle the remaining olive oil generously over the top. Season with freshly ground black pepper and a pinch of salt (remembering cod is still slightly salty).
- Preheat oven to 190°C (375°F). Bake for 45-60 minutes, or until the potatoes are golden brown and tender, and the cod is cooked through.
- Remove from oven, sprinkle with fresh chopped parsley. Serve hot, directly from the baking dish.
