👨‍🍳 Instructions

  1. Cut the white fish fillet into 1-inch (2.5 cm) cubes and place them in a non-reactive bowl.
  2. Add the freshly squeezed lime juice, thinly sliced red onion, minced Aji Limo (or chili), and a pinch of salt to the fish. Stir gently to combine.
  3. Let the fish marinate in the 'leche de tigre' (tiger's milk) for 5-10 minutes, or until it turns opaque. Do not over-marinate.
  4. Stir in the fresh chopped cilantro just before serving.
  5. Serve immediately with slices of boiled sweet potato and steamed choclo (Peruvian corn) on the side.
