👨🍳 Instructions
- Prepare the fish: Pat cod fillets dry. In a shallow dish, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, and onion powder. Add the cod fillets and turn to coat, then let marinate for 10-15 minutes.
- Prepare the slaw: In a medium bowl, combine shredded green cabbage, red cabbage, chopped cilantro, and lime juice. Toss gently to combine and set aside.
- Make the creamy sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, chipotle powder, and garlic powder until smooth. Taste and adjust seasoning as needed.
- Grill the fish: Preheat a grill or grill pan to medium-high heat. Grill the marinated cod fillets for 3-4 minutes per side, or until cooked through and flaky. Break into smaller pieces with a fork.
- Warm the tortillas: While the fish is grilling, warm the corn tortillas on a dry skillet, directly over a gas flame, or in the microwave for a few seconds until pliable.
- Assemble the tacos: Lay out the warm tortillas. Divide the grilled fish among them, then top with a generous spoonful of the cabbage slaw and a drizzle of the creamy sauce. Serve immediately with extra lime wedges.
