👨🍳 Instructions
- Warm the milk to about 38-40°C (100-105°F). In a large bowl, dissolve the yeast and 2.5g of sugar in half of the warm milk; let stand for 5-10 minutes until frothy.
- Stir in the flour and remaining milk into the yeast mixture, mixing until smooth. Cover the bowl and let the batter rise in a warm place for about 1-1.5 hours, until doubled in size.
- Separate egg yolks from whites. Lightly beat the egg whites and set aside. In a separate bowl, whisk the egg yolks with a pinch of salt, then stir in the melted butter into the risen batter.
- Gently fold the beaten egg whites into the batter last. Heat a non-stick pan or blini maker over medium heat, brush lightly with vegetable oil.
- Pour small ladles of batter onto the hot pan, forming 5-7 cm (2-3 inch) blini. Cook for 1-2 minutes per side until golden brown and cooked through.
- Serve the warm blini immediately with a generous spoonful of red caviar, a dollop of smetana (sour cream), and a sprinkle of fresh dill.
