👨‍🍳 Instructions

  1. Pat the Dover sole fillets dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a large non-stick skillet over medium-high heat until shimmering, then add the sole fillets without overcrowding the pan.
  3. Sear for 2-3 minutes per side, until golden brown and cooked through; remove fish and keep warm on a plate.
  4. Reduce heat to medium, add butter to the same skillet and cook until melted and lightly browned (beurre noisette).
  5. Remove the skillet from heat, stir in fresh lemon juice and chopped parsley, then pour the hot butter sauce over the cooked sole fillets.
  6. Serve immediately with an extra lemon wedge on the side, if desired.
