👨🍳 Instructions
- Cut the cod fillets into large chunks, season generously with salt and pepper, then set aside.
- In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic and sliced red bell pepper to the pot; cook for another 5 minutes until slightly tender. Stir in the diced tomatoes and cook for 5-7 minutes, breaking them down slightly.
- Arrange half of the sliced potatoes evenly over the tomato mixture. Place the seasoned fish chunks on top of the potatoes, then cover with the remaining potato slices.
- Pour in the dry white wine (if using) and then the fish broth or water, ensuring most ingredients are submerged. Bring to a gentle boil, then reduce heat, cover, and simmer for 20-25 minutes, or until potatoes are tender and fish is cooked through.
