Farfalle with Salmon

- Farfalle pasta 160 g · 280 kcal
- Salmon fillet 100 g · 208 kcal
- Heavy cream 50 g · 170 kcal
- Onion 20 g · 8 kcal
- Garlic 3 g · 4 kcal
- Olive oil 8 g · 66 kcal
- Dry white wine 10 g · 20 kcal
- Fresh dill 3 g · 1 kcal
- Lemon juice 5 g · 1 kcal
👨🍳 Instructions
- Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente.
- While the pasta cooks, pat salmon fillets dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Sear salmon for 3-4 minutes per side, until cooked through and flaky. Remove salmon from skillet, flake it into bite-sized pieces, and set aside.
- In the same skillet, add a little more olive oil if needed, then sauté chopped onion until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in the dry white wine and let it simmer for 1-2 minutes to reduce slightly. Stir in the heavy cream and lemon juice, then bring the sauce to a gentle simmer.
- Drain the cooked farfalle, reserving about 1/2 cup of pasta water. Add the pasta and flaked salmon to the skillet with the sauce. Toss gently to combine.
- If the sauce is too thick, add a tablespoon or two of the reserved pasta water to reach desired consistency. Stir in fresh dill and serve immediately.
