👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F) and prepare individual sheets of parchment paper (about 30x40 cm or 12x16 inches).
  2. On one half of each parchment sheet, arrange the julienned carrots, zucchini, cherry tomatoes, and thinly sliced shallots.
  3. Place a cod fillet on top of the vegetables, season lightly with salt and pepper, then top with fresh dill and lemon slices.
  4. Drizzle a little olive oil over the fish and vegetables, then add a splash of dry white wine or vegetable broth.
  5. Fold the other half of the parchment paper over the ingredients and crimp the edges tightly to create a sealed packet.
  6. Place the sealed packets on a baking sheet and bake for 15-20 minutes, or until the fish is cooked through and the packets are puffed up.
  7. Carefully open the papillotes (watch out for steam) and serve immediately in their parchment paper, allowing diners to enjoy the aromatic release.
