👨🍳 Instructions
- Preheat your oven to 200°C (400°F) and prepare individual sheets of parchment paper (about 30x40 cm or 12x16 inches).
- On one half of each parchment sheet, arrange the julienned carrots, zucchini, cherry tomatoes, and thinly sliced shallots.
- Place a cod fillet on top of the vegetables, season lightly with salt and pepper, then top with fresh dill and lemon slices.
- Drizzle a little olive oil over the fish and vegetables, then add a splash of dry white wine or vegetable broth.
- Fold the other half of the parchment paper over the ingredients and crimp the edges tightly to create a sealed packet.
- Place the sealed packets on a baking sheet and bake for 15-20 minutes, or until the fish is cooked through and the packets are puffed up.
- Carefully open the papillotes (watch out for steam) and serve immediately in their parchment paper, allowing diners to enjoy the aromatic release.
