👨‍🍳 Instructions

  1. Rinse and pat dry the fish fillets, then season them generously with salt, black pepper, and half of the lime juice.
  2. Finely chop the onion, tomatoes, and bell pepper. Mince the garlic and chop the fresh cilantro.
  3. In a pan, heat half of the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic, sautéing until softened, about 5-7 minutes.
  4. Remove from heat and mix the sautéed vegetables with the chopped tomatoes, fresh cilantro, and the remaining lime juice. Season with a pinch of salt and pepper.
  5. Gently heat the banana leaves over a low flame or dip them in hot water for a few seconds to make them pliable and prevent tearing.
  6. Place a piece of seasoned fish on each banana leaf. Spoon a generous amount of the vegetable mixture over the fish.
  7. Fold the banana leaf carefully to create a sealed parcel around the fish and vegetables. Secure with kitchen twine or skewers if necessary.
  8. Place the banana leaf parcels on a grill, in a hot oven (around 200°C/400°F), or in a steamer. Cook for 15-20 minutes, or until the fish is flaky and cooked through.
  9. Carefully unwrap the parcels and serve the fish hot, often with rice or farofa.
