👨‍🍳 Instructions

  1. Peel and quarter the potatoes, then boil them in salted water until very tender; drain well and mash with 25g butter and 50ml milk until smooth and creamy. Season to taste and set aside.
  2. Preheat oven to 190°C (375°F). Flake the cod and salmon into large pieces, ensuring no bones remain. Add the frozen peas and chopped parsley to the fish.
  3. In a saucepan, melt 25g butter, then stir in the plain flour to form a roux. Cook for 1 minute.
  4. Gradually whisk in the remaining 259ml milk and fish stock until the sauce is smooth and thickened. Simmer for a few minutes, stirring continuously, then remove from heat.
  5. Gently fold the flaked fish, peas, and parsley into the sauce. Pour the mixture into an ovenproof dish.
  6. Spoon the mashed potatoes over the fish mixture, spreading evenly. Sprinkle with grated Cheddar cheese, if desired, and create a decorative pattern with a fork.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling. Let it stand for a few minutes before serving.
