👨🍳 Instructions
- Peel and quarter the potatoes, then boil them in salted water until very tender; drain well and mash with 25g butter and 50ml milk until smooth and creamy. Season to taste and set aside.
- Preheat oven to 190°C (375°F). Flake the cod and salmon into large pieces, ensuring no bones remain. Add the frozen peas and chopped parsley to the fish.
- In a saucepan, melt 25g butter, then stir in the plain flour to form a roux. Cook for 1 minute.
- Gradually whisk in the remaining 259ml milk and fish stock until the sauce is smooth and thickened. Simmer for a few minutes, stirring continuously, then remove from heat.
- Gently fold the flaked fish, peas, and parsley into the sauce. Pour the mixture into an ovenproof dish.
- Spoon the mashed potatoes over the fish mixture, spreading evenly. Sprinkle with grated Cheddar cheese, if desired, and create a decorative pattern with a fork.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling. Let it stand for a few minutes before serving.
