👨🍳 Instructions
- Season the cod fillets generously with salt and pepper, and set aside. In a large tagine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic, fresh cilantro, and fresh parsley, cooking for another minute until fragrant.
- Stir in the ground cumin, paprika, turmeric, and ginger; cook for another minute. Add the tomato paste and canned diced tomatoes, stirring to combine.
- Pour in the water, bring to a simmer, then add the diced potatoes and sliced carrots. Cover and cook for 15-20 minutes, or until the vegetables are slightly tender.
- Gently place the seasoned cod fillets on top of the vegetables. Add the sliced bell pepper, preserved lemon, and green olives around the fish.
- Cover the tagine and continue to cook for another 15-20 minutes, or until the fish is cooked through and flaky. Garnish with extra fresh cilantro before serving.
