👨‍🍳 Instructions

  1. Clean the fish pieces thoroughly and season lightly with a pinch of salt and a dash of black pepper. Set aside.
  2. In a large pot, bring water to a boil, then add the diced onion, minced garlic, sliced ginger, pimento seeds, and whole Scotch Bonnet pepper.
  3. Add the prepared fish, diced Irish potato, carrot, yellow yam, and fresh thyme sprigs to the pot. Reduce heat to medium-low and simmer gently for about 30-40 minutes.
  4. The vegetables should be tender and the fish cooked through. Carefully remove the whole Scotch Bonnet pepper (do not burst it) and the thyme sprigs.
  5. Stir in chopped scallions and a squeeze of fresh lime juice just before serving. Taste and adjust seasoning with salt and pepper as needed.
