👨🍳 Instructions
- Clean the fish pieces thoroughly and season lightly with a pinch of salt and a dash of black pepper. Set aside.
- In a large pot, bring water to a boil, then add the diced onion, minced garlic, sliced ginger, pimento seeds, and whole Scotch Bonnet pepper.
- Add the prepared fish, diced Irish potato, carrot, yellow yam, and fresh thyme sprigs to the pot. Reduce heat to medium-low and simmer gently for about 30-40 minutes.
- The vegetables should be tender and the fish cooked through. Carefully remove the whole Scotch Bonnet pepper (do not burst it) and the thyme sprigs.
- Stir in chopped scallions and a squeeze of fresh lime juice just before serving. Taste and adjust seasoning with salt and pepper as needed.
