- Ensure you have a sashimi-grade flounder fillet, impeccably fresh and previously frozen to eliminate parasites, then pat it completely dry with paper towels.
- Using a very sharp knife, slice the flounder against the grain into thin, translucent pieces, about 2-3mm thick, ensuring each piece is uniform.
- Arrange the sliced flounder artfully on a serving plate, fanning them out or overlapping slightly.
