👨‍🍳 Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped leek, garlic, and green chili; sauté until softened, about 5-7 minutes.
  2. Stir in spinach, Swiss chard, fresh cilantro, fresh parsley, ground cumin, and ground coriander. Cook until the greens have wilted, about 5 minutes.
  3. Make two wells in the greens mixture and crack an egg into each well. Season with salt and black pepper.
  4. Cover the skillet and cook for 8-12 minutes, or until the egg whites are set and the yolks are still runny, to your preference.
  5. Remove from heat, crumble feta cheese over the top, and serve immediately.
