🛒 Ingredients

  • Ayu (Sweetfish), fresh 150 g · 165 kcal
  • Lemon, wedge 10 g · 3 kcal
  • Daikon radish, grated 30 g · 5 kcal

👨‍🍳 Instructions

  1. Clean the ayu fish by gently scraping off any scales and patting them completely dry with paper towels; do not gut the fish as the bitterness from the internal organs is prized.
  2. Make a few shallow diagonal incisions on both sides of each fish, then generously sprinkle salt over the entire fish, including the fins and tail.
  3. Preheat your grill to medium-high heat. If using a conventional grill, lightly oil the grates to prevent sticking.
  4. Place the ayu on the hot grill. Grill for 7-8 minutes per side, or until the skin is beautifully golden-brown and slightly crispy, and the flesh is cooked through.
  5. Carefully remove the grilled ayu from the grill and serve immediately with a lemon wedge and a small mound of grated daikon radish.
