  1. Rinse the mackerel fillet under cold water and pat it thoroughly dry with paper towels to ensure a crispy skin.
  2. Score the skin side of the fillet diagonally a few times to help it cook evenly and prevent curling; then season generously with salt on both sides.
  3. Heat vegetable oil in a non-stick pan over medium-high heat until shimmering. Place the mackerel fillet skin-side down in the hot pan.
