👨🍳 Instructions
- Rinse the whole red snapper under cold water, pat dry with paper towels, and score the sides of the fish with 2-3 diagonal cuts.
- Mince the garlic and finely chop the parsley and thyme. In a small bowl, combine olive oil, minced garlic, chopped herbs, and lemon juice (from half a lemon).
- Season the fish generously inside and out with salt and black pepper, then rub the olive oil mixture all over the snapper, ensuring it gets into the scores.
- Preheat your grill to medium-high heat (about 375-400°F / 190-200°C) and lightly oil the grates to prevent sticking.
- Place the snapper on the hot grill. Grill for 7-10 minutes per side, depending on thickness, until the skin is crispy and the flesh is opaque and flakes easily.
- Carefully remove the grilled red snapper from the grill. Garnish with fresh lemon wedges and a sprinkle of chopped parsley. Serve immediately.
