👨‍🍳 Instructions

  1. Rinse the whole red snapper under cold water, pat dry with paper towels, and score the sides of the fish with 2-3 diagonal cuts.
  2. Mince the garlic and finely chop the parsley and thyme. In a small bowl, combine olive oil, minced garlic, chopped herbs, and lemon juice (from half a lemon).
  3. Season the fish generously inside and out with salt and black pepper, then rub the olive oil mixture all over the snapper, ensuring it gets into the scores.
  4. Preheat your grill to medium-high heat (about 375-400°F / 190-200°C) and lightly oil the grates to prevent sticking.
  5. Place the snapper on the hot grill. Grill for 7-10 minutes per side, depending on thickness, until the skin is crispy and the flesh is opaque and flakes easily.
  6. Carefully remove the grilled red snapper from the grill. Garnish with fresh lemon wedges and a sprinkle of chopped parsley. Serve immediately.
