👨‍🍳 Instructions

  1. Pat the hake fillets dry and season with salt and pepper. Finely chop the garlic and parsley.
  2. Heat olive oil in a wide pan over medium heat. Sauté the chopped garlic until fragrant, about 1-2 minutes.
  3. Sprinkle in the flour and stir for one minute to create a light roux. Pour in the white wine and fish broth, stirring constantly until slightly thickened.
  4. Carefully place the hake fillets into the sauce. Add the fresh clams and green asparagus to the pan.
  5. Cover the pan and simmer for 5-7 minutes, or until the fish is cooked through and the clams have opened. Discard any unopened clams.
  6. Stir in the fresh chopped parsley. Taste and adjust seasoning if necessary.
  7. Serve the Merluza en Salsa Verde immediately, garnished with extra fresh parsley if desired.
