Hake in Green Sauce

- Hake fillet 180 g · 160 kcal
- Olive oil 15 g · 135 kcal
- Garlic 10 g · 15 kcal
- Fresh parsley 10 g · 4 kcal
- Dry white wine 50 g · 41 kcal
- Fish broth 100 g · 10 kcal
- All-purpose flour 5 g · 18 kcal
- Fresh clams (meat) 40 g · 28 kcal
- Green asparagus 30 g · 6 kcal
👨🍳 Instructions
- Pat the hake fillets dry and season with salt and pepper. Finely chop the garlic and parsley.
- Heat olive oil in a wide pan over medium heat. Sauté the chopped garlic until fragrant, about 1-2 minutes.
- Sprinkle in the flour and stir for one minute to create a light roux. Pour in the white wine and fish broth, stirring constantly until slightly thickened.
- Carefully place the hake fillets into the sauce. Add the fresh clams and green asparagus to the pan.
- Cover the pan and simmer for 5-7 minutes, or until the fish is cooked through and the clams have opened. Discard any unopened clams.
- Stir in the fresh chopped parsley. Taste and adjust seasoning if necessary.
- Serve the Merluza en Salsa Verde immediately, garnished with extra fresh parsley if desired.
