👨🍳 Instructions
- Wash and finely chop all fresh herbs (parsley, cilantro, dill, scallions); ensure they are thoroughly dried. Finely chop the onion.
- In a large bowl, whisk the eggs. Add the chopped fresh herbs, dried fenugreek leaves, chopped walnuts, barberries, and finely chopped onion.
- Season the mixture with turmeric powder, salt, and black pepper. Mix everything thoroughly until well combined.
- Heat vegetable oil in a non-stick skillet over medium heat. Pour the Kuku Sabzi mixture into the skillet, spreading it evenly.
- Cover the skillet and cook for 15-20 minutes, or until the bottom is golden brown and the edges are set. You may flip it carefully and cook for another 5-7 minutes for even browning, or finish in a preheated oven at 175°C (350°F) for 10-15 minutes.
- Once cooked, slide the Kuku Sabzi onto a cutting board. Cut it into wedges or squares and serve warm, often with plain yogurt or bread.
