🛒 Ingredients

  • Lutefisk (rehydrated cod) 200 g · 170 kcal
  • Potatoes 150 g · 135 kcal
  • Frozen green peas 50 g · 45 kcal
  • Rendered bacon fat 20 g · 180 kcal

👨‍🍳 Instructions

  1. Place the rehydrated lutefisk, skin-side down if applicable, in a large baking dish or pot without adding any water. Season lightly with salt and pepper.
  2. Cover the dish tightly with aluminum foil or a lid and bake in a preheated oven at 175°C (350°F) for 25-30 minutes, or steam on the stovetop over low heat until the fish is flaky and translucent.
  3. While the lutefisk cooks, boil peeled potatoes in salted water until tender, then drain and keep warm. Separately, cook frozen green peas according to package directions, then lightly mash them.
  4. In a small pan, fry chopped bacon until crispy and most of the fat has rendered. Remove the bacon pieces and reserve the rendered fat.
  5. Serve the hot lutefisk with boiled potatoes and mashed green peas. Drizzle generously with the warm rendered bacon fat, and garnish with the crispy bacon bits if desired.
