  1. Combine miso paste, mirin, sake, granulated sugar, and soy sauce in a bowl. Whisk until smooth to create the marinade.
  2. Place the cod fillets in a shallow dish or a resealable bag and pour the marinade over them, ensuring the fish is fully coated. Marinate in the refrigerator for at least 24 hours, ideally 2-3 days.
  3. Preheat your broiler to high. Remove the cod from the marinade, gently scraping off any excess marinade but leaving a thin layer on the fish. Pat dry the non-skin side if present.
