Miso Cod

- Cod fillet 180 g · 160 kcal
- White miso paste 50 g · 100 kcal
- Mirin 30 g · 70 kcal
- Sake (cooking sake) 30 g · 30 kcal
- Granulated sugar 20 g · 80 kcal
- Soy sauce 18 g · 10 kcal
👨🍳 Instructions
- Combine miso paste, mirin, sake, granulated sugar, and soy sauce in a bowl. Whisk until smooth to create the marinade.
- Place the cod fillets in a shallow dish or a resealable bag and pour the marinade over them, ensuring the fish is fully coated. Marinate in the refrigerator for at least 24 hours, ideally 2-3 days.
- Preheat your broiler to high. Remove the cod from the marinade, gently scraping off any excess marinade but leaving a thin layer on the fish. Pat dry the non-skin side if present.
- Line a baking sheet with foil and lightly grease. Place the cod fillets skin-side down (if applicable) on the prepared baking sheet.
- Broil for 7-10 minutes, or until the fish is cooked through and the glaze is caramelized and slightly charred at the edges. Watch carefully to prevent burning due to the sugar content.
- Serve immediately, often garnished with finely sliced scallions or sesame seeds. Enjoy with steamed rice and vegetables.
