👨‍🍳 Instructions

  1. Slice the onions thinly and finely mince the garlic. Season the tuna steaks generously with salt and black pepper on both sides.
  2. Heat olive oil in a large pan over medium-low heat. Add the sliced onions and cook slowly for 20-25 minutes until very soft and deeply caramelized, stirring occasionally.
  3. Add the minced garlic and bay leaf to the pan, cooking for another minute until fragrant.
  4. Pour in the white wine and sherry vinegar, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.
  5. Add water or fish broth to the pan, bring to a gentle simmer, then carefully place the tuna steaks into the sauce.
  6. Cook the tuna for 2-4 minutes per side, depending on thickness and desired doneness. The fish should be cooked through but still moist.
  7. Adjust seasoning with salt and pepper to taste. Serve the Atún Encebollado immediately, optionally garnished with fresh parsley.
