  1. Clean and scale the whole fish, make a few diagonal cuts on both sides, then season generously inside and out with salt, pepper, and lime juice.
  2. Heat olive oil in a large frying pan or skillet over medium-high heat. Fry the seasoned fish for about 7-10 minutes per side, until golden brown and cooked through.
  3. Remove the fried fish and set aside. In the same pan, add a little more olive oil if needed, then sauté chopped onions, green bell peppers, and minced garlic until softened, about 5-7 minutes.
  4. Add diced tomatoes to the pan, season with salt and pepper, and simmer the sauce for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. Place the fried fish on a serving platter and generously spoon the tomato and vegetable sauce over it. Garnish with fresh cilantro and serve immediately.
