👨‍🍳 Instructions

  1. Season cod fillets generously with salt and pepper; set aside. In a large skillet or pot, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper to the skillet and sauté for 5-7 minutes until softened. Stir in minced garlic and Aji Amarillo paste, cooking for another minute until fragrant.
  3. Pour in the coconut milk, add chopped tomatoes and lime juice. Bring the sauce to a gentle simmer, stirring occasionally.
  4. Carefully place the seasoned cod fillets into the simmering sauce. Cover the skillet and let the fish poach gently for 8-12 minutes, or until cooked through and flaky.
  5. Remove from heat, taste and adjust seasoning if needed. Garnish with fresh chopped cilantro before serving. Serve immediately with rice or plantains.
