- Full-fat coconut milk 400 g · 920 kcal
- Onion, chopped 120 g · 48 kcal
- Red bell pepper, diced 120 g · 37 kcal

👨🍳 Instructions
- Season cod fillets generously with salt and pepper; set aside. In a large skillet or pot, heat olive oil over medium heat.
- Add chopped onion and bell pepper to the skillet and sauté for 5-7 minutes until softened. Stir in minced garlic and Aji Amarillo paste, cooking for another minute until fragrant.
- Pour in the coconut milk, add chopped tomatoes and lime juice. Bring the sauce to a gentle simmer, stirring occasionally.
- Carefully place the seasoned cod fillets into the simmering sauce. Cover the skillet and let the fish poach gently for 8-12 minutes, or until cooked through and flaky.
- Remove from heat, taste and adjust seasoning if needed. Garnish with fresh chopped cilantro before serving. Serve immediately with rice or plantains.
