  1. Pat the cleaned whole fish dry with paper towels; score the skin a few times on each side. Season generously with salt and black pepper both inside and out.
  2. Heat olive oil in a large skillet or wide pot over medium heat. Add sliced garlic and chili flakes, sauté for 1 minute until fragrant, being careful not to burn the garlic.
  3. Carefully place the seasoned fish in the skillet. Add the halved cherry tomatoes around the fish, along with the white wine and water.
  4. Bring the liquid to a gentle simmer, then reduce heat to low, cover the skillet, and cook for 15-20 minutes. The cooking time depends on the fish thickness, ensure it's cooked through and flakes easily.
  5. Once the fish is cooked, remove it from the skillet and set aside. Increase the heat to medium-high and reduce the sauce slightly, letting the tomatoes break down. Stir in most of the fresh parsley.
  6. Return the fish to the skillet, spooning the vibrant sauce over it. Serve immediately, garnished with the remaining fresh parsley and a drizzle of extra virgin olive oil.
