- Whole Sea Bream (Orata), cleaned 180 g · 210 kcal

👨🍳 Instructions
- Pat the cleaned whole fish dry with paper towels; score the skin a few times on each side. Season generously with salt and black pepper both inside and out.
- Heat olive oil in a large skillet or wide pot over medium heat. Add sliced garlic and chili flakes, sauté for 1 minute until fragrant, being careful not to burn the garlic.
- Carefully place the seasoned fish in the skillet. Add the halved cherry tomatoes around the fish, along with the white wine and water.
- Bring the liquid to a gentle simmer, then reduce heat to low, cover the skillet, and cook for 15-20 minutes. The cooking time depends on the fish thickness, ensure it's cooked through and flakes easily.
- Once the fish is cooked, remove it from the skillet and set aside. Increase the heat to medium-high and reduce the sauce slightly, letting the tomatoes break down. Stir in most of the fresh parsley.
- Return the fish to the skillet, spooning the vibrant sauce over it. Serve immediately, garnished with the remaining fresh parsley and a drizzle of extra virgin olive oil.
