  1. Preheat your oven to 200°C (400°F) and prepare four large sheets of parchment paper or aluminum foil, ensuring they are big enough to create a sealed packet.
  2. Wash and julienne the carrots and zucchini; halve the cherry tomatoes, then gather all prepared vegetables.
  3. Place one cod fillet in the center of each parchment sheet. Arrange an equal portion of the julienned vegetables and cherry tomatoes around each fillet.
  4. Drizzle each fillet and vegetables with olive oil and a splash of white wine, then season generously with salt, freshly ground black pepper, and fresh dill sprigs.
  5. Fold the parchment paper over the fish and vegetables, then crimp the edges tightly to create a sealed packet, leaving some air inside to allow steam to build.
