👨‍🍳 Instructions

  1. Wash and pat dry the cod fillet, then cut it into large, even chunks. Peel and dice the potatoes, carrots, and onion; finely chop the celery.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, sautéing for 5-7 minutes until softened.
  3. Add the diced potatoes to the pot along with enough water or fish stock to cover all vegetables. Bring to a boil, then reduce heat and simmer for 10-15 minutes until potatoes are almost tender.
  4. Carefully add the cod chunks to the simmering soup. Cook for another 5-7 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Remove the pot from heat. Stir in the fresh lemon juice and season generously with salt and freshly ground black pepper to taste. Garnish with fresh chopped parsley before serving.
