👨‍🍳 Instructions

  1. Prepare the pickling brine: In a saucepan, combine 1 cup white wine vinegar, 1 cup water, 2 tablespoons sugar, 1 tablespoon salt, 3 bay leaves, 1 teaspoon black peppercorns, and 1 teaspoon mustard seeds.
  2. Bring the brine to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and let it cool completely.
  3. Slice the red onion into thin rings and cut the pickled gherkins lengthwise into thin strips.
  4. Lay each cured herring fillet flat. Place a few red onion rings and a strip of gherkin at one end of the fillet.
  5. Carefully roll the fillet tightly from the end with the fillings towards the other end. Secure each rollmop with a wooden skewer or toothpick.
  6. Place the prepared rollmops in a clean jar or container. Pour the cooled pickling brine over them, ensuring they are fully submerged.
  7. Seal the jar/container and refrigerate for at least 24-48 hours before serving to allow the flavors to meld.
