👨🍳 Instructions
- Prepare the pickling brine: In a saucepan, combine 1 cup white wine vinegar, 1 cup water, 2 tablespoons sugar, 1 tablespoon salt, 3 bay leaves, 1 teaspoon black peppercorns, and 1 teaspoon mustard seeds.
- Bring the brine to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and let it cool completely.
- Slice the red onion into thin rings and cut the pickled gherkins lengthwise into thin strips.
- Lay each cured herring fillet flat. Place a few red onion rings and a strip of gherkin at one end of the fillet.
- Carefully roll the fillet tightly from the end with the fillings towards the other end. Secure each rollmop with a wooden skewer or toothpick.
- Place the prepared rollmops in a clean jar or container. Pour the cooled pickling brine over them, ensuring they are fully submerged.
- Seal the jar/container and refrigerate for at least 24-48 hours before serving to allow the flavors to meld.
